Pork tenderloin is a whole muscle, boneless loin that comes within the hog. It is narrower and thinner compared to larger loin roasts. Tenderloins typically weigh between 3/4 lbs to 1.5lbs, and are leaner. Learn how to easily remove the silver skin from your pork tenderloin.


A pork shoulder can be bone-in or boneless and is made out of two parts: the butt and the picnic. Sometimes the butt can be referred to as a blade, and is best used for pulled pork. Pork shoulders are well-marbled and flavourful; best suited to slower roast times and lower temperatures (slow and low).


Alongside with spices and vegetables of your choice, don't forget to add a liquid to your slow-cooker when cooking pulled pork. This can be chicken broth, root beer, etc. It just needs to have a liquid to help it cook.


Don't forget to brown (lighly saute) your pork shoulder on all sides first before cooking it in the Instant Pot; it will help with flavour and tenderness. If you're using a larger or smaller roast, you may need to add/subtract 5-10 additional minutes of cook time per pound of pork.


The internal temperature of pork should reach 155F (68C) while cooking then rested/tented for about 3-5 minutes until the final temperature reaches 160F (71C). The 160F (71C) internal doneness is recommended by Health Canada.


Fortunately, with improved food safety knowledge and better production methods in Canada, trichinosis is no longer a risk in Canadian pork. We know pork can be cooked safely to a resting (160F/71C), which produces a juicy and tender product.


Using the recommended time and temperature guidelines will ensure that the meat is cooked to the minimum safe internal temperature, which is critical in preventing food-borne illness that can be caused by undercooked pork. Using an accurate meat thermometer is the best way to ensure the proper doneness of pork.

This is my recipe for whole roasted pork leg, also known as hornado de pierna de chancho in Ecuador. This roasted pork leg is prepared by marinating the pork in a sauce of beer (and orange juice/cider), garlic, achiote (annatto), and spices. It is then slow roasted with butter and spices.

When you cook a pork roast in a slow cooker, how long you cook it for depends on how large your roast is. I use a small 3-4 pound boneless pork roast for this recipe and I like to cook it in a slow cooker on LOW for 10-12 hours. You can cook it on HIGH for 6-8 hours, but I think the texture and flavor is better when you cook it on low.

I enjoyed the pork very much but mine had skin on and I would like to know if the brine would soak through the meat much better without it. Your recipe seems to have no skin tho I didnt see where it said skinless.


A lamb leg is classic. A 3-hour shoulder is excellent. But for the most succulent roast lamb of your life, slow-roast it for 12 hours in the oven overnight. Cooked at a very low temperature with plenty of braising liquid, you can set-and-forget without a worry. The Instant Pot is an incredible tool in the kitchen for making dishes that usually take a long time. In the pressure cooker, you can drastically cut down the cooking time for dishes like this tender pork roast.


For a typical pork roast, the only flavoring that it really needs is salt and pepper. I use a mixture of coarsely ground kosher salt and black pepper. It takes about 1 1/2 teaspoons of each for a total of 3 teaspoons to coat the entire pork well. Be sure to use it all because it does need it. Just about any spice blend will work on a roast. We like to use this dry rub seasoning that is pictured above.


Be aware that if you are using dry rub it will begin to burn on the bottom of the Instant Pot if you take too long with this step. It should just take about 6 minutes. If the rub is starting to burn on the bottom, remove the roast and add more oil to the pot.


There will be some browned bits on the bottom of the pot from searing the pork. You need to get that up before cooking. That is called deglazing the pan and will ward off the dreaded burn notice. Add the water to the pot and use a whisk to scrape the bits up.


The length of time you need to cook the pork for will vary depending on the size of your roast. It is recommended that you cook a boneless pork roast for 15 minutes per pound in the Instant Pot. Cooking it this long will lead to a sliceable roast, not a fork tender roast.

In this recipe we you will brown the roast on all sides which will take 8-10 minutes. Then pressure cook the 3 pound roast for 45 minutes with a 10 minute natural pressure release. So all together it will take a little over an hour.


You can definitely cook a partially frozen pork shoulder. It will change your cooking time and will depend on how frozen it is. You may need to add half the total cooking time to account for the frozen meat.
